I just witnessed in my game a fresh Ebon Jaguar on my team overheat without override and his head instantly exploded from heat damage and he died. I thought PGI said they fixed it to where the head no longer takes heat damage.

Nope, just on the PTS. They're holding it hostage so that they won't implement it unless we let them implement ED. At least, that's what it looks like.

I don't record my games and I didn't think to take a screenshot but I was dead and spectating while our EBJ was fighting a light 'mech in the basement on HPG. He did not have override engaged and pushed his 'mech to overheat to get the kill blow, but instead of shutting down his head just popped. And I was just sitting there like "wut...?"

Ya, I've had it happen before in my ebon jaguar as well, though I suspect that's coincidence. Usually right after overheating and hitting override right after almost out of reflex. Pop.

I also note that if you hit a cooling module and over heat a fraction later, you shut down with the coolant module half discharged. How does that even work?
