We may not be able to choose which map we drop on but can we select our paint scheme to match the terrain? Every damn time I land on a snow planet I am painted black or green!

In some other games you set different camo schemes which show on the appropriately themed map. No overly effective for most mechs but stealth commandos... yep that would be cool fun.

Beyond several hundred meters, every camo turns to ugly grey.

What Bandito said.
Basic green (default) is actually a all-purpose color that camouflages well on nearly every map. Kind of dumb considering that PGI wanted to monetise colors, and aren't giving good reason to buy any.

Camos work well.

Painting with whites or premium colors make you light up like a torch on any dark map. Better to stick to greys or dark hues if you're looking to hide.

I've been finding a rather odd success with smoke jag black, obsidian black and camo green, its just enough color to make me happy to look at my mech, but not enough to attract attention.

It actually seems like the more drab colors paint you to be "not a threat" or an attractive target. Kinda cool to see the fact nature still has an effect on us this day and age. Think brightly colored flowers and honeybees, more attractive you are (camo pattern and colors used) the more customers you get (mechs trying to shoot your face off.)
