Obviously, it doesn't really matter with the Clan 'mechs which one you get, but I think the ones listed have a few of the more commonly used hardpoints.
I own all those Hero 'mechs. I love my Grinner, especially with a PPC arm. I like my Knockout for running Gauss builds, because it's a little safer. I haven't field tested my Partisan, but I have a few builds in mind that look promising. I'm stumped for what to do with my Florentine, currently leaning towards using RLs.

Tempted to try out my first Light mech with the WLF. Other than the hero, which the most commonly used variant? Run pulse lasers?

People seem to really like the WLF-2 with 5-6 MPLs, though I prefer 2 ERLLS in the arm and run MPLs on the WLF-1A instead, because it has 5/6 hardpoints in the torsos. I'll mention though, that the WLF-1A has the least armour quirks, though only by 3-4 points per location, however it's also the only one with arm quirks.

The double AMS here is really nice. And when combined with the crab's natural durability, it can keep you in the fight for a long time. You can get pretty fast with LFE and 5 Med pulse as well
If you don't care about AMS, CRB-27B good too because it has one more energy HP
CRB-27SL is good due to being the only one with Jump Jets, if you are into that.
Grinner is great. The ECM option is always welcome. If you don't care about ECM, WLF-2 is good with 3 ER Large or WLF-1A with Med lasers of choice.
Not really a huge fan of the Black Knights, but BL-6B-KNT stands out as being the most versatile. I like throwing pulse lasers on it and brawling.
No opinion on Maulers - haven't used them much

- There are a multitude of build possibilities with these. A friendly word of advice to new Ebon Jag owners -> when twisting to spread damage, lift the nose... going to be something that you're not used to but it spreads damage better that way.
Executioner (any) - despite lack of tonnage you can still make a good laser vom/gauss vom build out of one. Plus it's fairly mobile considering its tonnage.
Arctic Cheetah (any) - worth getting one or more
Shadowcat (any) - 2 HLL and 6 LMGs are pretty good or swap out the LMGs for a cERML, jumps high and is very mobile... worth picking one up
Black Knight - 6B if you want one, only good one because of heat gen quirk... but not recommended to chase quirks
Crab - 27B for heat gen or 27SL for jumpjets
Wolfhound - WLF-2, heat gen
