Those extra monitors in mech cockpit. Be nice to see my system specs on one of those displays, showing FPS, temps and more. Can that be possible?

The game engine is the limiting factor in putting anything more than animated images on those "screens". Until they upgrade to UE4 or something similar, there's no chance whatsoever of any of those kind of changes.
