At the beginning its quite usefull to strip and switch but as the game progresses it becomes less and less neccessary, cause every new mech you buy comes with its own stuff so you will most likely have enough of everything at some point or you are good enough to have so much money that you don't care.

Another thing to note... even though weapons and engines get automatically equipped if you have them in your inventory (NOT on other mechs), switching the types of armor, structure and heat sinks costs in either direction - as does adding or removing Artemis capability.

Beside the gamedesign choice or better said need of a moneysink you can see it like with cars.
When you have two cars but only one engine you can only build it into one of these cars and the for the other you either need to remove the engine from the other car and place it into the next or you buy a second engine.
There isn't an automatic swapping of engines from one car to the other just because you wrote it down on paper that you would have installed the enigne there, you have to actualy move the engine there or have a second one.
