A few tweaks could've made this work-able, me thinks. To simply scrap it was not a good move.

The reason we don't have IK/knockdown is mostly due to desync.

Curious I thought desync just meant that instead of twist, turn, accel/decel being tied to the engine they were tied to the chassis so how does that stop them from having knockdown?

Yes, that was called "engine desync."
In online gaming desync generally refers to movement or action that is registered or rendered incorrectly between the server and or clients.

Yeah but that exists in most online games depending on server tick rate and user connection speed and latency. Doesn't stop other games from implementing systems around it.
