It's hard to think of a mech that adds any real functional difference with the critical system as it stands. A 'mech like the Orion, while one of my favorites, is by it's own definition a "poor man's atlas". While a mech like the Emperor suffers from having only two variants in the relevant time frame. Some of my favorites like the Ymir are great fluff, but something few would use for competitive play. (A shame, really. The Ymir is gorgeous.) After a bit of reasearch I've picked the following 'mechs:
. . . Actually you know what? Scratch point number 2.
The Titan, my assault weight mech of choice. The Titan doesn't want your moduels. It doesn't need them. The Titan is a 'Mech that serves as an anchor to it's Lancemates - not just because it's slow, but because nothing really wants to get close to a Titan. With 22 tubes of SRM murder on top of six medium lasers, the Titan is one of the few mech able to force the an Atlas pilot to comically backpedal into buildings in pants sh**ting terror. At long range the Titan needs to be careful however, because it's pair of PPCs won't win it any sniping matches. But you know what? If FD redesigned the Titan I'd take two, variants be damned.

(No? Ok, I'll take a Victor. I like it's hat.)
For a heavy mech, the Helepolis would make base fights a lot more interesting, and give people second thoughts about hugging their team mates quite so tightly. Sure you need to program in artillery for this one, but. . . I forget how that's a bad thing. Artillery, whee! And look at that gun, sweet mercy.

(The Koschei is also acceptable.)
The medium choice is trickier. We have golden mechs like the Starslayer, Kintaro and Vindicator. Still, I think what we lack in the mediums department is. . .
a scorpion. "What?!" you shriek in rage and indignation. "That's your worst suggestion yet!" But wait! It may not look like much, but the scorpion can sidestep like the commando can run, and has a low profile that makes it hard to hit. It's cannon flavors may be large laser, PPC and ERPPC, but with the MWO hardpoint system you could fit it with a TAG and an LRM 20, circling enemys and raining death on them like a hopped up Kyudo.

(Yeah I'm not too sold on it either, go make your Blackjack then.)
It's a shame, but a lot of the best 'Mechs are shelved for reseen redesign.

- Crab is NOT readily available, if at all, at the moment (we're still in 10/2049)
"Designed during the last days of the Star League, the Crab proved to be a superior unit, likely to become the standard medium 'Mech of the SLDF, were it not for the events leading to the downfall of the Star League. First built in 2719, fewer than 1,000 were built before the Succession Wars destroyed the technological know-how to build and maintain these 'Mechs. Following the recovery of the Helm Memory Core, Cosara Weaponries was able to restart production in 3050"

Well, I know about it, but Isn't it similar to Highlander? I mean, if we have one helm core mech, why can't we have two?

I't would be nice to have Koschei only because of it's name

The problem with most of the current mechs is that they all look alike to me. The only mech game I own is MW2, and at least to me, all the mechs look distinctly different in MW2.
There's just not enough difference in the look of them, none of the current mechs have distinguishing features, except maybe the Hunchback and the Jenner.
What I want to see is a mech like the Mad Dog or the Summoner. I know there are different timelines and stuff but I don't pay to much attention to that. I just want to see interesting mechs walking around.
Every time people see a new mech they always go "oh wowwwwwwwwww i rember that mech, it was so awesome blah blah blah", whereas I just draw a blank on everything except for the Jenner and Atlas.
Basically i'm asking for more nostalgia
