Because I feel like there is no difference if I do it or if I just leave my Mech alone... seems to take the same amount of time...

If you press the override shortly BEFORE heat WOULD shut you down, it 'remembers' that press. Someone said how long, I forget. Five or ten seconds I think.

I find it hard to get my hands to the 'o' key while driving though, so you may want to bind it to a mouse or something closer to wsad.

4:52 is an example of overriding in practice.

If you override for a lot of heat then you will very quickly take internal heat damage all over your mech as long as you are at 100% heat.

I personally have it bound to the Q key because of how much I use it.

If your heat meter is at say, 103%, if you override you won't see much difference compared to waiting.

If your heat is at 130% and you hit override, you'll notice a big difference compared to waiting.(you'll be way overheated and will be taking internal damage until your heat drops)

Just becareful, I've killed myself a lot using that override button. Setting my own ammo on fire is not fun.

I find it works best when you hold down the 'O' key. While it is held down, you will not automatically shut down. You WILL probably kill yourself, however.
