Not sure if the problem is directly bug related or just physics. Anyway the Centurion extremely hard to kill after it's arms have been shot off. This seems to relate to,

1) either the hitbox is off...

or

2) the actual torso is so small and slim that it is very very difficult to hit, meaning it may need some hitbox tweaking...

Especially since a lot of centurions seem to make good use of this by equipping 4 torso weapons and nothing in the arms...

No problem with loosing weaponry even when your shot to pieces and still hard to kill...

I think it's more to do with you not hitting the CT straight after you've stripped it. I forget what the number is, but only a certain percentage of damage dealt to a broken component will transfer inwards. The CT on that thing is narrow-ish, so you're probably hitting busted side torsos on it.

In addition, there's a 10% damage reduction bonus to the LT when the missile doors are closed. It's a really hearty mech, takes a while to bring one down.

The Centurion is really tough to hit compared to the Hunchbacks barrel torso.
The only tip I can give is aim for the right arm, its somewhat like the hunch on the Hunchback.

Leg it and then hit from the side. That seems to work for me.
