I liked MW4's Hardpont system, but I felt it was crazy restrictive at the same time. MW3's gave you much more freedom, but also had my Timber Wolf shooting PPCs out of it's missile rack. I'd be happy with either, but hardpoint can be a bit of a day-ruiner. (NO PPCS ON MY DIRE WOLF? FFFFFFFFFFFFFFFFFFFFFFFFFFFFFFFFFFFFFFFF-)

Do we know how this game's MechLab will work?

This won't answer all your questions you may have, but it will put it in perspective.

Please note:
-In the game, currently is the year is 3049.
-In the game, we are only get Inner Sphere tech. So no Timber Wolf, no Dire Wolf, no clan tech, etc.

For now. Another 6 months and, well....
Do you wan't to say another 10 months?

The Clan's only begin their actions in the Inner Sphere at 3050 march.
And we do not know how they implement the clans, and the clan tech into the game...

Well the clan tech is basically the same as the Inner Sphere but...you know...better
.
So maybe we'll see it coming as the game is already out. Kinda like World of Tanks : launching the game with complete gameplay, but incomplete units.
What would be really bad is that the free-to-play mechanism allows the "rich" players to buy clan-tech and not the others, that would certainly suck... :/
As for the mechlab in itself, seems to work like the original game, and that is just awesome. But some restrictions would be nice...Like if you buy a hunchback, and get rid of the AC to put 10 small lasers, well that wouldn't be a hunchback anymore... I don't know if I want complete freedom on the mech, OR the entire weapons would have to show on the mech model, which doesn't seem to be the case if we look at the video above.

You have restriction. Just under the Hardpoint Slots you find the Hardpoint Restrictions. It is basically very similar to MW4. If you take out a beam weapon you have to replace it with another beam weapon, etc.
If you want to replace the Hunchbacks AC20 with lasers you have to buy a different variant of the mech with beam hardpoint instead of ballistic ones.

If you want to replace the AC/20 with lasers, you will be required to buy the variant(Swayback) that has energy hardpoints instead of ballistic ones in the torso. The base Hunchback can load, I think, up to four lasers(two in each arm) but not the 8 medium laser boat you can build with the Swayback(which can be purchased in game)
As for firing PPC out of your missile racks, we have already seen that the PPC variant of the Catapult has big honkin' energy cannons mounted on it instead of missile pods. The Swayback has six laser lenses on the front of the weapon casing instead of a single ballistic bore(or so we've been told), and as the game continues to be worked on I expect we will see many more visual weapon variants.
