1) Every mech is great so why not use a Phract or Stalker.
Just make sure you get the variant that suits your style of play.

Yes. It doesn't matter what mech you're using. The Premium bonus will give you more C-Bills per match no matter what.

Premium does make Trials bring in more money. You're getting that +50% regardless of what you're riding. This basically means that a 75k lose will translate into around 100k. The boost will actually be bigger in a Trial than in a regular Mech since Trials naturally earn more money. The downside however is that you still aren't earning any experience for a variant, and also that the Mech variant experience part of the boost isn't being used.
