As I understand it this is a 3 step process.
Step 1: Use mech XP to gain Master level. (This allows you to equip modules to that variant?)
Step 2: Use GXP to unlock a specific module for use.
Step 3: Purchase hardware related to Step 2's Module in Mech Lab and equip to Step 1's mech.
Please correct any of this if I'm misunderstanding it.
My question is, do I need to unlock Master level on all 3 variants or can I sell off Elite variants I don't need? My Jenner JR7-K is just a gimped JR7-D and is wasting a mech bay.

Nope, you don't need master level to equip modules. All mechs come with 1-3 module slots, master level only gives you +1 to the total count.

The MS row is what you're looking for.
After you've unlocked Master for the mech you want, you can safely sell off the rest (it should be safe to do so before you actually buy the Master level improvement, as long as you bought all the Elite upgrades on 3 models, you're good to go).

You can sell off any ****** variants after filling the basic trees on 3 and still take any left to master. If you ever feel one of the ****** variants has been unshittyfied you can repurchase it and the xp you once gained will still be there.
