Well .. I don't know .. I would send in a support ticket and describe the situation.
The maximum possible armor on a centurion is 338.
You did 721 damage.
IF this was really the only mech you hit the entire time then you did 383 internal damage to the mech.
A mech has 8 internal sections including the head. This means that each internal section had to receive a MINIMUM of 47.9 damage. Any other redistribution would mean that some section would have received more.
Unfortunately, I don't know how much internal structure points a mech has in MWO. In TT the internal structure is less than the armor. If that is the same in MWO (even if they have doubled it) ... then there is no way that this mech should have survived so I would definitely bug report it.

Only thing I can think of is an ammo explosion to a cased location. If he had like 2 tons of LRM ammo and a ton of AC/5 ammo, that would have been over 600 damage right there. Just being tracked incorrectly. But no arms missing makes this unlikely.

This kind of situation happened to me about 3 times last night.
First, a centurion proved nearly impossible to kill. It was down to orange CT, not arms or side torso left, and two people after him, hits registering, not going down.
Second case, a Catapult with pretty much everything gone, ended up dying but soaked up an incredible amount of damage (I'm talking 3xSRM6 + 2x LBX10 + 2 MLs repeatedly).
Last, I was the one who ended up very surprised, as I was chasing a hunchy (in my trusty DRG-1C/ Gauss+SRM6+4MLs) arriving in an area with no less than 4 other ennemy mechs who started unloading unto me, turning tail, I still go hit -a lot-, but ended up under cover among friendlies, with armor still there only down to yellow/ oj. I was the first one to be surprised, as I was getting rocked a lot and thought I was a goner for sure.

I chalk this up to the servers having no idea where the mechs actually are for damage transference. This isn't a latency issue or shot prediction issue. This is a shooting the front armor and scoring a kill through the rear armor style issue, or shooting the head and blowing off a leg issue. This is a shooting at a stationary atlas 300m away and getting zero convergence on the target issue.
This kind of instance is rare, but it does happen. Nothing can be done against it really other than trying to wait it out. Typically the time it takes to figure out there is something goofy going on, it is already too late though.

there was only 1 centurion that i saw he came over the coldara first and circled me, the rest of my team had gone the 3 / 4 line, after about a minute of pounding the centurion the rest of his / her team came around from the 6 / 7 line and finished me off.
According to my paper doll the centurion still had full armor on legs and arms and only showed heavy damage to center / left and right torso also head showed damage, looks like im not the only one that is confused about this, but i can honestly say that there was only 1 mech involved with my damage tally, as i was cored very quickly once the rest of the team showed up.
Just wish i had fraps running......................................

I meant to write up a bug report the other day but it completely slipped my mind.
At over 2100 matches played I've pretty well seen it all; or so I thought. The other day, just after the patch came out, I was playing my SRM6 cat and completely cleaning up. At the end of the match, I had taken 0 damage... like, not even a scratch. Which is odd, because I was absolutely being hit! I was in a few duels, saw stuff hitting me, had the cockpit shake and noise, but no damage. Effectively, I was invulnerable.
Now I don't know the details; maybe I was taking damage but it wasn't showing or maybe everyone was in fact missing, or something was seriously messed up with the connection, but I didn't die, didn't lose any guns, and racked up 4 kills and the win.
The very next round things were back to normal. If the centurion you were shooting at had the same bug... did this even take place just after the patch? This, like many other scenarios, are times when I wish we had a replay function or I had a computer fast enough to run video recording software at all times...

might have to do with the transfer bug...some parts on certain chassis don´ttransfer damage when they are taken out...you can shoot at them and deal another 1000 damage, but they will just not transfer the damage over to the next part...PGI said they are working on that IIRC
might even be the case, the server "thought" there was still armor left, not transfering damage to the internals...
i know about several hunchbacks that just didn´t go down while they were only a walking reactor with a cockpit on top...
Unfortunately, I don't know how much internal structure points a mech has in MWO. In TT the internal structure is less than the armor. If
should be "internals X 1.5 = maximum armor" if i remember right...it´s been a while since i read the rules
