If you really want to get philosophical, MMO games (truly great MMO games, at least) are in a perpetual state of beta. Even after they've "officially" been released they'll still add new content and updates. The money you spend, whether before or after release, goes towards continued development.
MWO pushed into 'open beta' with less content than other MMOs should have at this point, but this is largely because MWO isn't an MMORPG. It's purely a multiplayer combat sim. They don't have to code quests with NPCs, objectives, loot, etc. They went into open beta with less because the game is easily playable and enjoyable in the state its in. The core gameplay and mechanics are in place and everything else that comes afterwards is just adding on, but they obviously don't want to officially release until they have a lot more in place. But as has been said, anything you buy now sticks with you (except for paints, since those get overwritten every time you repaint. That would be the only thing I say don't bother paying for.)
nope. not even close. To be out of beta means to have the fundamental structure of the game almost perfect. Expanding on that with expansions is not reverting the earlier version to beta status.
Released means:
Stability.
Little to no bugs.
A good block of content.

Funny, I seem to remember buying Red Orchestra 2 and Battlefield 3 before their official release so I could Beta test those too. I pay in Betas to help support development and to help mold the game itself. Or I could just be like a lot of people here and make nonproductive snide comments.
