Obviously all that is assuming an undamaged enemy, or one with damage that's relatively evenly-spread. If one section is particularly badly hit then I'm likely to target that (unless it's like the arm on a Spider 5V or something).

For a Med: Core is fairly easy to take down
For a heavy: Core
For an assault: Assaults with no ST are poor people who just can't cope, am for the side with more weapons and cripple them quick.

With all the DHS and so on people stuff their ammo into the legs.
And why the left leg?. Because the Ammo in there is the last to be used by the guns.
So even if I can't cause a ammo explosion, they lose more ammo when leg falls off.

Sometimes I intentionally pick a mech apart if it is 1v1 and I am sure I can out pilot the enemy (i.e. he is terribad and can't hit the broadside of a barn). I only do this if the match is all but over and I do not need to assist my team. It is also kind of a d*ck move so I generally don't like to do this.
This is all very dependent on what I am driving too. Bottom line, though, you want to take the enemy out of the fight and gain the numbers advantage as quick as you can. Usually it is much better to just try to kill the enemy than to cripple him.

In my heavier 'Mechs I tend to go for the torso of whatever gets in my sight, while in my lighter 'Mechs I often go for the legs. (What's all this about people putting low armor and/or ammunition in their legs? Seems pretty stupid to me)
But if I see something like a toasted limb I might try focusing on that, or even better a badly damaged torso section (whether or not the enemy may be using XL a side torso lost is always a good thing)
And if I see a 'Mech with little to no damage, which usually happens when I'm alone (go figure) I turn around and run for the hills.

Interesting. I've often wondered in what order ammo is used if you have ammo for the same weapon in several different locations. Anyone have any further info on this?

Oh...usually a side torso since mostly I'm fighting assaults and a lot of the good bits are in the side torsos. Best to go in from behind, I've noticed a lot of those Jagers have little back armor.

atlas is the classic- right torso first

mostly i decide from 2 things: how fast can i bring it down, and whats the loadout? very mobile/ hard to hit mechs - legs

Others get hit wherever they have been opened first or left torso from me which is RT for them...

Also mechs alway die if you take out the CT whereas you could shoot off both side torsos and a leg and that mech could still kill you with a small laser mounted in the head. There is alot less armor on the CT than both side torsos and then the CT.
However yeah if I identify a specific weakness like for example I know a AC/40 jaggy is going to be mounting an XL, then I will shoot for a side torso if I can get a good shot. Same goes for shooting at the head on a Catapult. It is located dead Center in the CT anyway so why not go for a quick headshot.
