Medium: Shadowhawk probably the 2D2 though I like the 5M and 2H. all the builds I use could be done on the 2D2.
Heavy: Cataphrat-IM. The 3D is probably better, but I love the IM.
Assault: Pre-Gauss nerf it was the Victor-9K. Now it's the 9S.

A chassis is not Meta. The loadout might be. Also, running meta because it is meta is foolish and boring. But avoiding meta simply because it is meta is likewise foolish. I ran mechs that are the current meta with those loadouts (like dual ac5s) long before they were the meta. So because some preachy anti meta folk get offended it is now a meta loadout, I should change it?
I'm anti meta, because I am anti the closed minded out look it promotes. But I find much of the anti meta crowd is equally closed minded. It's like listening to Liberals and Conservatives argue about who is more close minded..... when they are just opposite sides of the same fanatical coin.

Like you said, running a chassis just because it uses meta loadouts shouldn't be the reason why you pilot it - nor should one avoid to pilot a chassis BECAUSE it has meta loadouts. The biggest issue therein, is the diversity in weapon loadouts. Run what you wish, pilot what you like, but if a large portion of the chassis listed here runs the same kind of loadout with little deviation...
It is not unreasonable to identify the meta with those given chassis. But alas, that is a topic to be discussed in a separate thread entirely. Frankly, I personally would like to see some resurgence of other mechs to diversify the matches, such as Quickdraws, Trebuchets and whatnot.
But that's just me.

Heck, I would love to see my Griffins stand on top too (even while some silly people cry about the PPC being OP in Gameplay Balance, which is funny, because a perfect posterboy on the PPC not being so, is a Griffin vs ShadowHawk head to head. The Griffin with it's PPC is outclassed by the Shads ballistic in every way possible. Which is sad, as I always liked the Griff more in TT)

If had to pick a mech of any group, first choice goes to things that give me the +30% to c-bills, and all 4 of these are among the best of what they can do. I'd say Ilya, but between the K2 and Jester I have over 1100 matches so they hold a soft spot in my heart.

Assault : Heavy Metal, because it's the only Assault I own that I've played more than a couple matches with.
Heavy: Cat-K2, even though my first love was the Ilya, the K2 is the most fun of any mechs I pilot these days.
Medium: Yen Lo Wang. I like my Blackjacks and Shadowhawks, but no medium is as fun as the Wang.
Light : TDK. I was tempted to put the Ember up here, but while it's easier to pilot, it's not as fun. Also, whenever I pilot my DK I hear this in my head:
