Because you come back in a fresh mech vs. banged up (In theory) enemies. Also slows down the avalanche/momentum of a team being up 3 or 4 kills. Would suck on large maps though. "k guys, just respawned, be there in 2 minutes..."

In our current game modes? Not really. There's the typical FPS Deathmatch/team deathmatch with infinite respawns and highest kill count "wins" at the end of the allotted time. That would just push everyone to drive larger mechs though to be able to slug it out longer before dying.
Although imagine a base attack/defense for the "dropship" mode, except players can only pick one mech of each weight class. Forces mech variety (Read: You'll see more lights and mediums), and ups the skill requirement since you would have to be versatile in more mech types.
Having respawns would also open up other possible game modes like:
-Capture the "flag"
-King of the hill
-Attrition (See Battlefield's ticket/Conquest system)
These wouldn't make as much sense with only one "life"
