[Chronojam]

A small color television up in the corner displaying (looped) streams of Solaris mech arena fights, relayed right to the cockpit. Complete with sponsor messages.

I'm a Amateur Radio operator. I'd have to say, photo frame for some loved one, and a clickable channel selector for
chat channels or voice chat programs. Like if i want to voice chat with my team i click the channel for

[O] Transmit to everyone and everything

More than anything else, I would want a carbine of some sort, right next to me in case I had to punch out.

The hula girl, fuzzy dice and custom picture are good too.
Also, a really bad satnav (like an in-car satnav) that tells you the longest way around to nowhere and constantly recalculates where it's going.

I think some things (i.e. boblehead, pinups) should be visible on the main cockpit view, but others (bug out bag, sidearm etc) might be reserved for an alternate interior view (internal look left/right).

We would be able to see other peoples stuff if 'ghosting' (perhaps lost mech but watching from team mate's POV)

Potentially enable an 'office' or 'ops room' annex to your hangar where you can display more items or stats.

To get a little more social, consider common areas so members of the same company/faction can see the collections others have.
