(3 Heavy I can't think of one I would play

(4 Assault- Atlas-DDC, Stalker

T-wolves are faster, more durable, and are still deadly when they loose a torso. (At least till the XL changes come in.) Gaussphracts are really only good if the other team doesn't know what they are doing and simply remains "passive" throughout the entire engagement.
You just described the average public match pretty well, though. In an ideal scenario, the 'Phracts would be at the mid-rear lines, with the Assaults to take the brunt of the Timber Wolves. That gives a pretty solid advantage to the Spheroids, since the Clan assaults are too slow to keep up. Assuming both groups are doing the smart thing and deathballing, the Spheroids would have plenty of time to soften up the Clan forces with pinpoint damage while they sprayed lasers all over their targets.

Trebuchets: The Griffin can do basically everything this mech can do with better hitboxes and mobility.
Wolverines: Not a bad mech in theory, but the variants are rather all over the place and none of them offer anything really special. Some can't mount ballistics, some have too many weapons in one arm, etc. In a vacuum - without the Shadowhawk or Griffin - they might see play. But the Griffin does missiles better, and the Shadowhawk does ballistics better, leaving the Wolverine with no real role to fill.
Kintaro: Not a bad mech, but the Griffin does missiles better with jumpjets.
Quickdraw: A heavy that is the size of an assault mech that also lacks ballistics and can't even spam LRM's thanks to small tube limits. A strong contender for worst mech in the game. As terrible as the Locust is, it is terrible mostly because of its tonnage and the fact it was never meant to fight. The Quickdraw simply has no excuse for all the failures that compose its design.
Dragons: Bad hitboxes, though at least it can mount ballistics and pack an XL engine. Not a great mech, though probably more playable than most people think... it's just that other mechs are even better.
Thuds: Generally marginal all around, though not terrible. Again, other mechs are just better, while Thuds are not terrible.
Awesomes: The weakest of the assault mechs thanks to a lack of ballistics and poor hitboxes. Still make good LRM platforms, however.
Battlemasters: Suffer from most of the problems of the Awesomes, thought at least they can mount ballistics, and 1 variant makes an excellent LRM platform.
Non-DS Victors and Highlanders: Nerfed into the ground.
Although, these days anything IS is become more and more rare on the battlefield.

Totally agree on the wolv, its one advantage over the griffon was negated with the jj change (that being its amazing ability to look down while jumping).
Kintaro is amazingly durable but with so much arm mounted its kind of a wash.

Apart from that well.... I have not seen many Locusts recently or Victors. I have seen a few Highlanders though. Trenchbuckets are a rarity but still seen and I still see Hunchbacks. Quickdraws seem to have vanished though, IDK why and Dragons are no longer seen - actually I might take mine out just to surprise people and show them what a good D can do.
Also, what the feth is a Wolverine

Mastered my Vindicators and have no intention of getting back in them except maybe the St Ives and IAA (if I feel like reliving the pain).

I saw one a few games ago, it died pretty fast.
Just after I had posted this I dropped into a game and there was one on the other team. It actually lasted throughout the match.... Mainly by hanging back and not doing much.

Vindies are small in number considering the recent release.
Saw a surprising number of Dragons this weekend.
One thing I haven't seen in a over a week or two is a full fledged Splatapult. Closed would have been a 2 x LRM10 | 4 x SRM6 build.

I don't know why though. The 4xER Large Laser 9M takes some effort to overheat in even the hottest maps and if you alternate the 2 you probably won't ever shut down. The 2xER PPC 5xML 8Q will also need to put some effort into shutting down in Tera Therma and that's without an XL engine.
