Thing is Monster-Hunter isn't purely stat dependent, player skill is heavily weighted and if you are good enough you can take on pretty strong Monsters even with low level gear and win. You try for a mid tier dragon in starter gear, it might one or two shot you if it hits, but if you are good enough at dodging and use your tools/traps intelligently.. it will never hit you. There is a "hard limit" in that you have to have a weapon with enough damage to kill the Monster before the mission timer expires or the Monster flees the map (typically 50 minutes) but even that's pretty flexible if you have enough skill and plan carefully enough.
The true "grind" in Monster Hunter is not the actual pursuit of gear (and there are no character stats to "level up" outside of your gear). The grind is you learning the monsters and the complexities of the game. There are 14 different weapons, all with wildly different playstyles and nuances to learn and every one of them are not just viable, but valuable once you learn how to utilize them and the games systems correctly.
I really can't praise MH high enough, if you enjoy complex action games with a rewarding learning curve and a surprising amount of depth.. you owe it to yourself to give the series a try. Though one word of advice; use a controller for it. K/M works and is fine (I use it for the ranged weapons, naturally) but a controller is where the melee controls are most at home.
Monster Hunter is justa gloriously complex series that still manages to not feel convoluted. I've roughly 50 hours in already as well and yeah it's been awesome. Runs just fine on my a-bit-above-mid-tier rig as well.

Why on earth would anyone play in those conditions..
Also waiting for Oceanic queues was insanely painful and 250-300 ping times to the US left me at a huge disadvantage..

I recently came back after a multi-year break and had something like 3000 free skill node points from all my old mastered mechs. Since I came back I've bought numerous new chassis (with cbills) and it's been fun experimenting with new builds.
That said, my supply of points is dwindling and I can absolutely tell that once I'm forced to grind those skill nodes my fun in the game is going to plummet. Enough that honestly I will probably leave again at that point. I like experimenting with builds but the idea of having to grind dozens of hours in a mech to skill it out and not be at a statistical disadvantage is just thoroughly unappealing. The cbil grind is already tedious enough and I say that being in the lucky situation of having multiple 30% bonus mechs that I'm good with and enjoy piloting.
Also the mech packs have always been disgusting. The price of a brand new AAA game (or more) for a digital mech.. that's utterly asinine to me and I have no idea at all why anyone has ever supported PGI's awful business model. Whenever the business model is mentioned I can't help but bring up what to me is one of the most laughably cynical things I've seen in a game; PGI charges six USD for a single different shade of green. I mean it's not 10 USD for a second save slot level bad, but still gods damned that's grodey.

Not everyone will agree with me, as all things game balance and design go. Thats fine, everyone can enjoy what they want. but I do think a very large amount of people arnt happy with the current game play. In the off chance that pgi is creeping this thread and is interested in whats wrong with the game I'll leave what I believe are the core problems with the current gameplay.
The easiest way to sum the problem up with the game is to say that its all a bunch of the same thing. Its just a giant nascaring deathball, with very little variation in mech builds. Theres no cool flanking, smaller skirmishes away from the group, cool builds, or anything. you sit with your group and alpha people and hope your team isnt the one that gets destroyed miserably. But theres many factors that contribute to this.
Map design is terrible. The new revamps of the maps just kinda make them all less fun. Its too big, and usually just promote bad game play. Aka new frozen city. Nobody wants to fight in the middle, it just promotes camping your base or nascaring. And maps are too mech biased now so if you are in the wrong mech and your map doesnt win have fun.
Hardpoint bloat. Theres way too many hardpoints on mechs now. It just makes the old mechs dead content and creates a few generic cheese builds that are better than everything else. and alpha and try to 2 shot people gameplay isnt fun or skillbased.
ECM nerf just promoted deathball game play. If you spread from the group to try and do anything interesting you just hear incoming missle and their piranhas come over to introduce you to bad gameplay.
Theres prob some other things but I feel like these are some of the core issues with the game. I'm hoping that at some point the game improves so I can come back to playing it 24/7. Its such a cool one of a kind game.

WoTs failed mid stream and decided to take the lucrative "arcade" route and is surviving with all of the "history or military" players leaving.... Many left when the toxicity became "significantly" personal..... WoWs is now going down the same route as WoTs......a real shame.
MWO failed on day one: PGI bit off more than it could chew. The reviews at launch were correct. But, this game had a huge following clamoring for "the next MW installment" after Mercenaries.... Well, here we are so many years later wondering what happened and the answer is the same as when the game started. MW kindred spirits didn't let MWO down, the corporation running it did..... They even tried the WoTs route towards the "arcade" version (Solaris) and that failed because there is so much MW game expectations and history, they couldn't even get "Rock-and-Sock'em-Robots" right....
