For the first days/weeks try using weapons with long cooldown that don't require much facetime like IS-AC20 or PPCs. This way you can use the cooldown time to remember yourself to keep calm, twist your torso to mitigate damage and of cause review your target's status.
Once you made a habit out of those things you can apply them when using high-facetime weapons too.

The little cockpit items actually help a bit there too honestly, I try to keep items up that draw my eye to certain areas naturally and/or remind me which side to shield for a mech etc.
I also often forget to press R or just don't bother in certain instances, but I am trying to get better at just the general reminder to constantly flick those things (target spotted when it becomes available in particular), at every possible opportunity, but I also play a very visual and movement oriented game based on my experience with gaming, so at times I feel justified not even caring about it when I can gauge from memory where people are/where they will potentially be, what damage I personally have inflicted to them and seen in passing glances and Rs, (not that I am fantastic at that, I just prioritise concentrating on those aspects first) and at the end of the day if I see an enemy body appear my immediate reaction is going to stay "shoot that centre mass" (or head for some of the bigger headed mechs), then get data on my cooldowns and while aligning for a fight or flight.
