Quite often, most 'mechs are put in the Tech Readout year of which is closest to their first production date, meaning the 'mechs in 3067 generally come off their assembly lines around that 5ish year period. The ones with a bit harder to nail down dates are stuff from the Star League era and between 3025-3050....but most of those have the dates in their fluff to compensate.

Medium: Hunchback, Hatchetman, Phoenix Hawk, Griffin, Shadow Hawk
Heavy: Catapult, Axemaster, Trebuchet
Assault: Highlander (2750 version not 3025), Atlas, Battlemaster (The Battlemaster is one of my favorite IS mechs out there.)
There are a ton of good mechs out there not mentioned in my list, but the ones listed are some of my top favorites, and you may notice not all of them are melee oriented.

The Bushwacker goes into fullblown production in 3053, so it wouldn't surprise me to see or hear of it going into production before then and getting a chance to pilot it four years down the road.

Generally speaking, you aren't going to get a chance to snag one until it goes into full production, because before that it's going to be so rare your pilot isn't going to know about it and the company developing it probably only has test 'mechs up and running and not a 'mech ready to be used on the battlefield.
That said, it all depends on how they're going to work in some of the smaller time gaps between story events, so we may see the 'wacker before 4 years up

Wouldn't mind seeing a Clint or a Wolfhound be added to the mix, though maybe adding a jump capable light might be a good choice.

Doods, This Mech was Built in 3010. If you know your history the first "new" battle' mech in the IS was built in 3023 and was the Hatchetman. But you know what makes this 'Mech much more bad ***? It was Built by the Outworld Alliance! That's right, as the "Technologically Superior" Inner Sphere houses were about to start bashing each others brains out. The Outworld was building completely new design. That is why i say the Merlin should be in the new game... and on a lesser note they should most likely add the Outworlds as a Faction.
But I'll seed that point if they put in the Merlin.

Besides, they already have the Dragon in game....which is like a better version of the Merlin in any case. Not to mention it's successor 'mech, the Grand Dragon. Both are faster, have as much armor, and have similar/better armaments.
Not hating on the Merlin, but it's not really needed at launch.

PUFFFFT WHAT!!! I will have nothing to do with that statement good sir. It is a Black mark on your honor! A GOOD DAY!
in all seriousness I can see that. But at the same time The Dragon doesn't have Jump Jets, While the Merlin does with a PCC and a few LRMs. So unless they give us a grand dragon with Jump jets i still want to use the Merlin.

True, you're basically trading off ground speed for the maneuverability of jump jets between the two chassis. That's really the only reason why I think the Merlin won't make release, though after it'd be a good candidate for a stock variant for people wanting a low range heavy that can hop.

I'm mostly focusing on the reality that every single one won't make it in for release. It's just not feasible. They'll probably keep churning out 'mechs after release, and we'll probably see the majority if not all of them then. I'd rather them make a core group then try to spread themselves too thin out of the gate.

Best Medium Mech Ever! Can definately take on a griffin or hunchback as it can keep people away. I know it was introduced in response to the clan invasion but hey! It's still a good ride I'd like to see and one I've used in every game it's been available
Always Fun:

Beyond that I think all the others I want have already been mentioned.

Bushwacker is an awesome medium 'mech. Fast with a good load out makes it a pretty strong workhorse for anyone. I'd probably go Hunchback in an urban environment cause I'd be a bit more scared of the Autocannon 20 at such a close range. Wacker is probably a shoe in once it actually shows up in the timeline, can't wait to see Flying Debris's version of it.
Don't personally like the Imp, but it's not a bad machine.
Longbow is solid, but I like running something like the Catapult that's a bit faster and more mobile....but I guess if you're lance is doing your job that's not a big concern, is it?
Wyvern is too slow for my tastes, even when considering it's geared toward urban combat. Not a bad 'mech, I just like more speed in the event I need to be more versatile.

a 40 ton medium mech that has the firepower and speed to justify itself.
http://www.sarna.net/wiki/Firefly
30 ton light mech with a good arsenal for such a low weight. There's a reason it's battle value is 716, higher than any other light mech.

Rumored to be in the game, and we saw screenshots of it with different weapon-arms before. If it's not in, it would be a great injustice! This is the Assault mech to use for people that want to missile boat from long range. It's what it's designed for.

just because it was damn hard to find a 70-75 ton mech that would fit in this timeline.
http://www.sarna.net/wiki/JagerMech
An extremely inexpensive long range ballistic support mech.
