um you make a mistake about the favorite mechs or unseens.. the unseens are the body style that is what the whole thing is about as for the mechs themselves they can be used because they have been remodeled.
Storm are you creating the list from what you have read through TRO's or what?

Some mechs are only currently produced by certain houses and would be rare in other houses too, so that is another factor to take into account....
Then there are those silly Wolf's Dragoons with their clan-ish tech and old lostech mechs in the mix.....

As for AC ammo, there's just the LBX cluster shots. The other types are all post-3050.
Missile ammo it doesn't really say except for a few that are all post-3050. I'd not assume that infernos were in if I were anyone here. Frag missiles are a 3050 listing.
Standard lasers and autocannons, LRMs and SRMs are all in. No MRMs, those were a 3058 invention.
