If you want a stock mode that's fine and valid, but trying to sell it as being newbie friendly is factually wrong.
For starters, there's heat issues. Even with DHS-enabled Champions, nubcakes overheat at the wrong times as it is. With a minimal number SHS equipped, it would happen even more often. The builds that come with DHS stock would be exponentially superior to SHS models.
Next is ammo issues. Nearly all stock loadouts had acceptable ammo levels for TT, but in MWO they run dry very early into the fight. I imagine that many of those shots would get wasted firing off into space. I've seen people try to snipe with SRMs sometimes, and it makes me sad...
There's also armor issues on many mechs. Lights, some mediums, Jagers, and Hellbringers would be extremely frail, and would explode if they got hit by a stiff breeze. The Kit Fox stock in particular has armor comparable to a Lolcust, or in some body parts even worse (i.e. CT).
And lastly, just like customized builds, there is a stock mech meta. Yes, that's right, not all stock mechs are created equally. Some stock mechs are objectively superior to others. Many of the stock variants we have were quite literally designed from the ground up to be outright superior to their predecessors, with the only "drawback" being a somewhat higher spacebucks cost. Stock mechs with things like DHS, XL (depending on the mech), Endo, Gauss, etc. would be the kings of the castle. The Clans in particular have a lot more semi-decent stock builds than the IS does at this point in time.
...So you can have stock mode, I'm not saying no to that, but I just want ya'll to know that it really ain't newbie friendly in any sense of the word.
