Will there be a HUD only mode? I typically prefer to play as if my monitor is my viewscreen/windshield and I am the pilot, rather than have the monitor be a window through which I see a virtual cockpit that my avatar inhabits.
EDIT: My multi-screen question was essentially answered in todays tweet session, yes multi-screen support is in, but they are not yet ready to tell us how many screens or how they are implementing them.

What I found was, we players would actually be sacrificing a lot to build load outs that "match" those unseen mechs in the low and middle weight ranges, and really not gain much in the heavy and assault classes. I'm not sure how or if this helps, do you have anything to add, is this something you've already looked at and that is why your making the selections we've seen so far.

1) How many maps do you hope to have finished by the start of open beta?
2) When can we expect new maps after launch? (based on there only being 1 or 2 at open beta time)
